Although it has become a symbol of convenient food in the middle of the century, jelly salad has a surprisingly long history. In the Middle Ages, wealthy families first began to mold gelatin into molds. Various ingredients—from truffles to veal tongues—are suspended in these elaborate aspics.

But it wasn't until the 20th century that instant gelatin powder allowed ordinary home cooks to make jelly salads in their own kitchens. This era provides us with recipes such as perfect salads, tuna rings and other savory desserts.
